The Châteauneuf red
Cuvée da Capo is, we very much hope, nothing to do with the Mafia, rather it is a single foudre of no specific provenance, which is selected only in exceptional years (2009, amazingly, did not make the cut) and aged for significantly longer than the Reservée. The resulting wine is often seen as the very best in the appellation. The 2010 is tighter than the Reservée, unsurprisingly, but behind the brooding beast there is an impressive fruit character….,the sweet and the savoury are rehearsing their pas de deux which will be sure to impress even the strictest of judges.
The Châteauneuf red (a small quantity of white is also produced) is a blend of 75% Grenache, 20% Syrah, with the remaining 5% being made up of Mourvèdre, Counoise and other varieties. The grapes are hand harvested and are then fermented without being de-stemmed. The cuvaison lasts for 12-15 days and the wine is then aged for around 18 months in old oak foudres. No fining or filtration is carried out. The Cuvée Laurence is the same wine as the Cuvée Réservée but is kept in wooden cask for another 18-24 months before being bottled. These are rich, robust and concentrated wines, which tend to show at their best with 7-8 years of bottle age.

When onions start to mature, the tops (foliage) become yellow and begin to fall over. At that point, bend the tops down or even stomp on them to speed the final ripening process. Loosen the soil around the bulbs to encourage drying. Be sure to harvest in late summer, before cool weather.

Fun and exciting routes & trails in and around the Berg river Dam with spectacular views of the Franschhoek Mountains. These trails are ridden by very few with three routes on offer. We also welcome back our coach and race ambassador, Joanna Dobinson from Biking in the Bosch who will be in the mix and assisting all our riders.
